This dressing should be made at least 24hrs before you plan to use it.
1: Oil MUST be added at a slow & steady rate, DO NOT add all at once or the dressing will separate and spoil.
2: Do not take too long to mix or the dressing will turn out too thick
See attached pic for making different quantities (This page is based on the ‘1/8 recipe’ column).
- Combine Garlic & Anchovies in a food processor & blend into a smooth paste
- Using a spatula, transfer paste into a stainless steel container
- Add Lemon Juice, Vinegar, Pepper and Mustard then mix well with a whisk.
- Using a hand-held mixer, blend the Olive Oil into the mixture at a slow and steady pace
- Refridgerate for at least 24hrs before use
