This recipe convincingly makes the case for how good cabbage can be. Serve with Veal, Ham and Egg Pie.
The large cabbage referred to in this recipe is approximately 2lb
- Chop the cabbage coarsley
- Bring a large pan of salted water to a boil and plunge the cabbage into it for 2 minutes
- Drain and return to the pan
- Add the milk and half the butter, season with salt and pepper then cover and simmer for 15 minutes
- Transfer the cabbage to a serving dish, stir in the remaining butter then serve immediately
