The basic white sauce can be used ‘as is’ however it is generally used as the base for other more flavorful sauces.
- Melt the butter in a heavy-bottomed saucepan over a low heat
- Add the flour and cook for 2 minutes, stirring constantly
- Gradually stir in the milk until you have a smooth white sauce
- Season to taste with salt and pepper then simmer very gently for 15 minutes, stirring occasionally
