Beef and Guinness Stew

This is a rich, tasty stew cooked in Guinness which is fantastic served with new potatoes or over a bed of mashed potatoes.

  1. Cut meat into 1 inch cubes
  2. Coarsely chop the onions
  3. Preheat oven to 250°F
  4. Place 2 tablespoons of oil and the salt in a frying pan and brown the meat in it.
  5. Transfer the meat to a large ovenproof casserole dish
  6. Using the same frying pan as you browned the meat, brown the onions with a little salt then add to the meat and season with pepper..
  7. In the frying pan make a roux with the flour and remaining tablespoon of oil.
  8. Add the consomme and stir until the mixture is smooth with no lumps then add it to the casserole
  9. Mix the Guinness with the brown sugar and vinegar then pour over the meat
  10. Cover the casserole and cook for 2 1/2 hours at 250°F
  11. Remove the cover and cook for a further 30 minutes.
  12. Peel and chop the carrots
  13. Add carrots to the casserole around the beef
