- 1/2 Can (450g)
- Beef Consomme
- 6 fl oz
- Guinness
- 3 Tbsp
- Sugar - Light Brown
- 2 Tbsp
- Vinegar - Malt
This is a rich, tasty stew cooked in Guinness which is fantastic served with new potatoes or over a bed of mashed potatoes.
- Cut meat into 1 inch cubes
- Coarsely chop the onions
- Preheat oven to 250°F
- Place 2 tablespoons of oil and the salt in a frying pan and brown the meat in it.
- Transfer the meat to a large ovenproof casserole dish
- Using the same frying pan as you browned the meat, brown the onions with a little salt then add to the meat and season with pepper..
- In the frying pan make a roux with the flour and remaining tablespoon of oil.
- Add the consomme and stir until the mixture is smooth with no lumps then add it to the casserole
- Mix the Guinness with the brown sugar and vinegar then pour over the meat
- Cover the casserole and cook for 2 1/2 hours at 250°F
- Remove the cover and cook for a further 30 minutes.
- Peel and chop the carrots
- Add carrots to the casserole around the beef
