- Broth - Beef
- 1/2 Cup
- Red Wine Vinegar

This is a classic English dish, purported to be a particular favorite of London folk.
For this recipe you will need to also make Suet Dumplings.
- Preheat oven to 250°F
- Peel carrots and cut into 4 inch slices
- Peel the onions
- Place the bacon slices in the bottom of a large casserole dish
- Put the brisket on top of the bacon
- Cover with the ale, broth and vinegar then bring to a boil.
- Remove any scum from the surface then cover the casserole and place in a 250°F oven for 3 hours
- Add the onions and carrots then cook for another 30 minutes
- Add the dumplings to the casserole, leave uncovered and cook for a final 30 minutes - See above for link to dumpling recipe.
- Transfer the meat and vegetables to a large serving dish and surround them with the dumplings.
- Drain the broth into a gravy boat and serve with the meat and vegetables.
