Bread Sauce is the traditional British accompaniment to roast chicken, roast turkey or any roast game bird. If you have never eaten bread sauce, don’t be put off by its name, it has a delicate and subtle flavor.
- Put fresh white bread through a blender to make 2 1/2 cups of breadcrumbs
- Peel Onion and stud it with the 3 cloves
- Put the onion and milk in the top of a double boiler and bring very slowly to just below boiling.
- Remove from heat and allow it to stand for 20 minutes so as to infuse the milk with the flavor of onion and cloves.
- Discard the onion and cloves then add the breadcrumbs to the milk and mix.
- Return to the heat, still using a double boiler and continue stirring until the sauce thickens.
- When the sauce has thickened, stir in the butter, nutmeg and sour cream then season to taste with salt and pepper.
