Cauliflower Soufflé

Don’t be frightened by the word soufflé. This subtly sophisticated dish isn’t difficult at all (just be careful not to overbeat the egg whites).

  1. Beat the 6 egg whites until stiff. Set aside for a few minutes while you make the sauce.
  2. Make a white sauce with the butter, flour, milk and salt.
  3. Beat the egg yolks then add the beaten yolks and shredded cheese to the white sauce. Stir until the cheese is melted.
  4. Add the cooked cauliflower and stir.
  5. Fold in the beaten egg whites.
  6. Pour the mixture into a buttered casserole dish. Sprinkle the top with a little extra cheese.
  7. Bake in a moderate oven 350 degrees for 50 to 60 minutes. Serve immediately
