Don’t be frightened by the word soufflé. This subtly sophisticated dish isn’t difficult at all (just be careful not to overbeat the egg whites).
- Beat the 6 egg whites until stiff. Set aside for a few minutes while you make the sauce.
- Make a white sauce with the butter, flour, milk and salt.
- Beat the egg yolks then add the beaten yolks and shredded cheese to the white sauce. Stir until the cheese is melted.
- Add the cooked cauliflower and stir.
- Fold in the beaten egg whites.
- Pour the mixture into a buttered casserole dish. Sprinkle the top with a little extra cheese.
- Bake in a moderate oven 350 degrees for 50 to 60 minutes. Serve immediately
