Green Onion / Scallions
2/3 Cup
Milk
4 Cup
Mashed Potato - Cooked
4 Cup
Cabbage - Cooked
4 oz

Colcannon

Colcannon is a Scottish version of Bubble and Squeak. Try serving with Wow-Wow Sauce.

  1. Preheat oven to 350°F
  2. Chop the cabbage into small pieces
  3. Chop the green onions very finely, using both the white and green parts
  4. Put the onions in a small saucepan with the milk, heat until just below boiling then set aside
  5. Mix the potatoes and cabbage in a mixing bowl and season well with salt and pepper
  6. Add the milk and onions to the potato and cabbage them mix well to combine
  7. Transfer to a greased pudding bowl or souffle dish and bake for 20 minutes
  8. Turn onto a serving dish
  9. Make several holes in the top and put a small knob of butter in each hole
  10. Serve immediately
