- Green Onion / Scallions
- 2/3 Cup
- Milk
- 4 Cup
- Mashed Potato - Cooked
- 4 Cup
- Cabbage - Cooked
- 4 oz
- Butter

Colcannon is a Scottish version of Bubble and Squeak. Try serving with Wow-Wow Sauce.
- Preheat oven to 350°F
- Chop the cabbage into small pieces
- Chop the green onions very finely, using both the white and green parts
- Put the onions in a small saucepan with the milk, heat until just below boiling then set aside
- Mix the potatoes and cabbage in a mixing bowl and season well with salt and pepper
- Add the milk and onions to the potato and cabbage them mix well to combine
- Transfer to a greased pudding bowl or souffle dish and bake for 20 minutes
- Turn onto a serving dish
- Make several holes in the top and put a small knob of butter in each hole
- Serve immediately
