Irish Stew, known to many as “White Stew” is very easy to prepare and makes a welcome change from the richer, more sophisticated brown stews.
It is traditional to serve Irish Stew with boiled carrots and red cabbage but these should be cooked separately.
- Preheat oven to 325°F
- Cut meat into 1 inch or smaller cubes
- Peel potatoes and cut into large chunks
- Peel and coarsely chop the onions
- Place the meat, potatoes and onions in layers into a casserole dish, ending with a layer of potatoes. Sprinkle each layer with a little thyme, salt and pepper as you go.
- Add the water
- Cover the casserole tightly with foil and then a lid to prevent any evaporation during cooking
- Cook for 3 hours
