Irish Stew / White Stew

Irish Stew, known to many as “White Stew” is very easy to prepare and makes a welcome change from the richer, more sophisticated brown stews.

It is traditional to serve Irish Stew with boiled carrots and red cabbage but these should be cooked separately.

  1. Preheat oven to 325°F
  2. Cut meat into 1 inch or smaller cubes
  3. Peel potatoes and cut into large chunks
  4. Peel and coarsely chop the onions
  5. Place the meat, potatoes and onions in layers into a casserole dish, ending with a layer of potatoes. Sprinkle each layer with a little thyme, salt and pepper as you go.
  6. Add the water
  7. Cover the casserole tightly with foil and then a lid to prevent any evaporation during cooking
  8. Cook for 3 hours
