- Kipper Fillet
- 6 oz
- Butter
- 2 Tbsp
- Lemon Juice
- 1/4 tsp
- Mace

This makes an excellent first course, a dip served with crackers or enjoy for breakfast spread on toast.
If fresh kippers are unavailable, you can use a 6 ounce can of kipper fillets.
- Place the kippers in a shallow dish and pour on enough boiling water to cover them - Skip this step if using canned kippers.
- Let stand for 10 minutes.
- Drain and carefully remove any skin and bones.
- Soften the butter then add to the kippers and pound into a paste. This can also be done in a blender or food processor.
- Add the lemon juice, mace and season with salt and pepper.
- Place the pate in a small dish, cover and chill.
- Allow the pate to stand at room temperature for at least half an hour before serving, otherwise it will not be soft enough.
