Kipper Fillet

Butter
2 Tbsp
Lemon Juice
1/4 tsp
Mace
Kipper Pate

This makes an excellent first course, a dip served with crackers or enjoy for breakfast spread on toast.

If fresh kippers are unavailable, you can use a 6 ounce can of kipper fillets.

  1. Place the kippers in a shallow dish and pour on enough boiling water to cover them - Skip this step if using canned kippers.
  2. Let stand for 10 minutes.
  3. Drain and carefully remove any skin and bones.
  4. Soften the butter then add to the kippers and pound into a paste. This can also be done in a blender or food processor.
  5. Add the lemon juice, mace and season with salt and pepper.
  6. Place the pate in a small dish, cover and chill.
  7. Allow the pate to stand at room temperature for at least half an hour before serving, otherwise it will not be soft enough.
