- Onion - Yellow
- 1 Tbsp
- Celery Stalk
- 1/2 Cup
- Flour - All Purpose
- 3 1/2 Cup
- Broth - Beef
- 2 Tbsp
- Ham - Cooked
- 2 Tbsp
- Parsley - Fresh
- 1 tsp
- Thyme - Dried
- 1/4 Cup
- Tomato Paste
- 1/2 Cup
- Madeira
- 1 oz
- Butter - Softened

This sauce does an amazing job of rejuvenating a leftover roast or turkey and keeps well for several days in the fridge.
- Finely chop the onions, celery and parsley
- Dice the ham
- Melt the butter in a heavy bottomed saucepan over a low heat then add the onion and celery.
- Cook until they are soft then add the flour and cook an further 5 minutes, stirring constantly
- Gradually add the broth, continuing to stir until you have a smooth sauce
- Finally, add the ham, parsley, thyme and tomato paste
- Cover the saucepan and simmer for 2 hours
- Remove from the heat then strain and season to taste with salt and pepper.
- Reduce the Madeira to about 3 Tablespoons by boiling it very fast then add it to the sauce.
- Stir in the softened butter, re-heat the sauce and serve
