Bay Leaf

Mace
1 oz
Butter
2 Tbsp
Flour - All Purpose
1 Cup
Milk
1 tsp
Lemon Juice
1/4 Cup
Cream - Heavy Whipping
Onion Sauce

A wonderful sauce to serve with game birds or lamb

  1. Peel the onions
  2. Place the whole, peeled onions in a saucepan and cover them with water
  3. Add the bay leaf, mace and a pinch of salt then cover and boil for 15 minutes or until the onions are tender
  4. Remove the onions and set aside
  5. Keep 1/2 cup of the water they were cooked in and discard the rest
  6. Melt the butter in a heavy-bottomed saucepan, stir in the flour and cook for 2 minutes
  7. Gradually add the milk, stirring constantly
  8. When all the milk is absorbed, add the 1/2 cup of onion water and stir well.
  9. Finely chop the cooked onions and add them to the sauce
  10. Add the lemon juice, cream and season with salt and pepper to taste
  11. Simmer 5 minutes then serve
