- Bay Leaf
- 1/4 tsp
- Mace
- 1 oz
- Butter
- 2 Tbsp
- Flour - All Purpose
- 1 Cup
- Milk
- 1 tsp
- Lemon Juice
- 1/4 Cup
- Cream - Heavy Whipping

A wonderful sauce to serve with game birds or lamb
- Peel the onions
- Place the whole, peeled onions in a saucepan and cover them with water
- Add the bay leaf, mace and a pinch of salt then cover and boil for 15 minutes or until the onions are tender
- Remove the onions and set aside
- Keep 1/2 cup of the water they were cooked in and discard the rest
- Melt the butter in a heavy-bottomed saucepan, stir in the flour and cook for 2 minutes
- Gradually add the milk, stirring constantly
- When all the milk is absorbed, add the 1/2 cup of onion water and stir well.
- Finely chop the cooked onions and add them to the sauce
- Add the lemon juice, cream and season with salt and pepper to taste
- Simmer 5 minutes then serve
