Oysters with BBQ Bourbon Chipotle Butter

Butter - Unsalted
1/2 Cup
Sugar - Light Brown
1/2 Cup
Bourbon Whiskey
3/4 Cup
Garlic - Fresh (Finely Chopped)
5 oz
Half can of ten oz chopped chipotle chilies in abodo sauce
Oysters with BBQ Bourbon Chipotle Butter

Friends line up for these smokey, sweet, slighty spicy and insanely delicious oysters.

  1. Soften butter to room temperature
  2. Finely chop the garlic
  3. Dissolve the brown sugar into the bourbon.
  4. Combine the butter, brown sugar/bourbon mixture, and other ingredients in a food processor & process until well mixed and smooth.
  5. Set down a piece of parchment paper, and pile butter along the center, working to form a ‘log’.
  6. Wrap butter, folding into a log-shape, and refrigerate for at least an hour. The finished roll should be the dimension of a cube of butter, only longer (about a foot).
  7. Note: while the butter log makes for ease of use when cooking, storing the butter in the mixing bowl and scooping it out by spoonful is just as effective.
  8. When ready to BBQ, fire up your grill to medium hot.
  9. Shuck the oysters and remove butter from the fridge, cut butter into thin pats, about 1/4 inch.
  10. Place a pat of butter on each shucked oyster and place the oysters on the grill.
  11. Open a cold one and wait for the butter to melt and start to bubble.
  12. Watch the oysters sizzle, for about one minute. Once the oysters and butter have bubbled remove them from the grill.
  13. Let cool for a brief moment and enjoy!
