Pan Haggerty

Pan Haggerty is a potato recipe from Northumberland. Serve with baked ham or chicken

  1. Peel and thinly slice the potatoes
  2. Peel and finely chop the onions
  3. Grate the cheese
  4. Melt the fat over a low heat in a heavy frying pan. Be sure there is enough to cover the entire surface of the pan, adding more if necessary.
  5. Fill the pan with alternating layers of potato, onion and cheese, beginning and ending with a layer of potato. Season each layer with a little salt and pepper as you go.
  6. Fry gently for about 30 minutes, then broil for 5 to 10 minutes until the top is well browned
  7. Serve straight from the frying pan.
