Pan Haggerty is a potato recipe from Northumberland. Serve with baked ham or chicken
- Peel and thinly slice the potatoes
- Peel and finely chop the onions
- Grate the cheese
- Melt the fat over a low heat in a heavy frying pan. Be sure there is enough to cover the entire surface of the pan, adding more if necessary.
- Fill the pan with alternating layers of potato, onion and cheese, beginning and ending with a layer of potato. Season each layer with a little salt and pepper as you go.
- Fry gently for about 30 minutes, then broil for 5 to 10 minutes until the top is well browned
- Serve straight from the frying pan.
