- Mushrooms - White
- 3 Individual
- Leek
- 1 Whole
- Rabbit (about 2 pounds)
- 3 Tbsp
- Parsley - Fresh
- 3 Med.
- Potato
- 1 Tbsp
- Vinegar - Malt

Chicken can be used in place of Rabbit in this recipe, however I don’t think you could then legitimately call it ‘Poachers Pie’
- Preheat oven to 325°F
- Slice mushrooms lengthwise
- Clean and chop the leeks into 3/4-inch rounds
- Chop rabbit into small portions, or dice into bite-size chunks
- Finely chop the parsley
- Peel the potatoes and slice into 1/4-inch thick rounds
- Place the bay leaf at the bottom of a large ovenproof dish
- Place 4 slices of bacon over the bay leaf and cover it with half the mushrooms and half the leeks
- Put the meat in next, then cover with the remaining mushrooms and leeks
- Season heavily with salt and pepper then sprinkle on 2 tablespoons of the chopped parsley
- Place the potatoes on top, covering all other vegetables
- Add a little more salt and pepper and the rest of the parsley
- Put the remaining bacon slices on top then pour the vinegar over them
- Put a tight lid on the pot and bake for two hours - Do not open the pot during cooking!
