Rabbit (about 2 pounds)

Poachers Pie

Chicken can be used in place of Rabbit in this recipe, however I don’t think you could then legitimately call it ‘Poachers Pie’

  1. Preheat oven to 325°F
  2. Slice mushrooms lengthwise
  3. Clean and chop the leeks into 3/4-inch rounds
  4. Chop rabbit into small portions, or dice into bite-size chunks
  5. Finely chop the parsley
  6. Peel the potatoes and slice into 1/4-inch thick rounds
  7. Place the bay leaf at the bottom of a large ovenproof dish
  8. Place 4 slices of bacon over the bay leaf and cover it with half the mushrooms and half the leeks
  9. Put the meat in next, then cover with the remaining mushrooms and leeks
  10. Season heavily with salt and pepper then sprinkle on 2 tablespoons of the chopped parsley
  11. Place the potatoes on top, covering all other vegetables
  12. Add a little more salt and pepper and the rest of the parsley
  13. Put the remaining bacon slices on top then pour the vinegar over them
  14. Put a tight lid on the pot and bake for two hours - Do not open the pot during cooking!
