Roast Potatoes

Roast Potatoes should be crisp on the outside yet soft on the inside. The secret is time and lots of it.

  1. Preheat the oven to 300°F
  2. Peel the potatoes and cut into large chunks
  3. Make sure the potatoes are dry
  4. Scratch their surface with a fork then sprinkle them generously with salt and a little flour
  5. Heat the oil or fat in a roasting pan and when it is hot, add the potatoes
  6. Cook for at least 1 1/2 hours, basting and turning from time to time
