- Meat Fat or Vegetable oil

Roast Potatoes should be crisp on the outside yet soft on the inside. The secret is time and lots of it.
- Preheat the oven to 300°F
- Peel the potatoes and cut into large chunks
- Make sure the potatoes are dry
- Scratch their surface with a fork then sprinkle them generously with salt and a little flour
- Heat the oil or fat in a roasting pan and when it is hot, add the potatoes
- Cook for at least 1 1/2 hours, basting and turning from time to time
