Sherried Puree of Peas

Since the peas are only coarsely pureed they have a very unusual texture yet with nothing but a little sherry added to them they remain a vibrant green color.

This recipe calls for frozen peas, however if they are available they taste even better with fresh peas. Replace the 1.5lb of frozen peas with 2lb of fresh peas.

  1. Cook the peas in a small amount of boiling water until tender 2 to 5 min
  2. Drain the peas and put them in a blender with the sherry
  3. Puree them very lightly so some of the peas remain whole
  4. Return the peas to the saucepan, season with salt and pepper to taste and reheat very gently.
