Spinach and Cheese Crepes with Mushroom Sauce

This recipe is for the filling only – you will need to have some crepes already made to work with this filling.

A crêpe or crepe is a type of very thin pancake, usually made from wheat flour (crêpes de froment) or buckwheat flour (galettes). The word is of French origin, deriving from the Latin crispa, meaning “curled”. Crêpes are served with a variety of fillings, from the simplest with only sugar to flambéed crêpes Suzette or elaborate savoury galettes.

  1. Preheat the oven to 375°F.
  2. Finely Chop the basil, Yellow Onion and garlic then finely Slice the Green Onions
  3. Peel the potatoes and steam until soft but not mushy, about 15 minutes then set aside to air dry and cool
  4. Steam the spinach then set aside to air dry and cool
  5. Dice the potatoes when cool enough to handle comfortably
  6. Stir fry mushrooms for a few minutes on high heat. Remove.
  7. Mix flour and butter in a saucepan over a low heat for a few minutes. Gradually add milk and stir sauce as it thickens for several minutes.
  8. Add sherry, onions and sliced mushrooms to sauce, continuing to stir. Adjust liquid until the consistency is thick. then set aside.
  9. Lightly fry onion, and then add spinach, lemon and garlic. Gently fry for a couple of minutes. Remove and mix into bowl with all ingredients which have not yet been used, gently folding through.
  10. Add a few spoonfuls of filling to each crepe, roll and place in greased oven pan.
  11. Bake for 12 minutes.
  12. Serve hot from oven, topped with the re-heated mushroom sauce. (Salad on the side, if desired).
