This is a very old Welsh recipe for a potato and onion dish that is baked like a cake in a slow cooking oven. It is similar to the French recipe for ‘Pommes Dauphinoise’
- Preheat oven to 300°F
- Peel the potatoes and slice into thin rounds
- Peel and finely chop the onions
- Dry the potatoes with paper towel to remove any excess moisture
- Grease a loaf pan or cake pan then add the onions and potatoes in layers, beginning and ending with a layer of potato. Dot each layer with a little butter as you go but be sure to keep at least 1oz for dotting the top layer. Also season each layer with salt and pepper as you go.
- Cover with foil and place in the oven for 90 minutes
- Remove the foil for the last half hour so the cake has chance to brown
- Turn the cake onto an ovenproof serving dish and place under the broiler to crisp for a couple of minutes before serving
