Yorkshire Pudding

Yorkshire pudding is an English dish made from batter consisting of eggs, flour, and milk or water. The dish is traditionally served with Roast Beef and gravy and is a staple of the traditional British Sunday roast. It may also be served with other meats (Roast Pork is especially good!) or even as a dessert.

Originally the Yorkshire pudding was eaten on its own as a first course with thick gravy to fill the stomach with the low-cost ingredients so that one would not eat so much of the more expensive meat in the following course.

  1. You can turn the oven off and leave the door partially open with the yorkies inside to keep them from deflating while waiting for everyone to ask for seconds.
  2. Sift flour and salt into a mixing bowl
  3. Make a well in the center and add the milk and water gradually, then beat together
  4. In a separate bowl beat the eggs until fluffy then add them to the flour mixture
  5. Bet the batter until bubbles rise to the surface then refrigerate for at least 30 minutes
  6. Put the Oil or Drippings in a 9" roasting pan or split evenly among 12 muffin cups
  7. While the batter is chilling, heat up your pan or muffin tin - You want the oil/fat smoking hot when you add the batter
  8. Beat the batter again then quickly pour it into your pan or muffin tins with the hot fat/oil and place in the 450°F oven
  9. DO NOT OPEN THE OVEN DURING COOKING!!
  10. After 10 minutes at 450°F reduce the temperature to 350°F and cook a further 15 minutes or so, until the pudding(s) have risen well and turned golden brown.
