Zuppa Toscana

Zuppa toscana (“soup in the style of Tuscany”) is an amazing Italian soup made with Italian sausage, cream, and potatoes.

  1. Strip leaves from the kale and chop
  2. Remove skins from sausage
  3. In a large pot over medium heat, cook sausage, breaking up with the back of a wooden spoon, until browned and no longer pink, 5 to 7 minutes
  4. Add garlic and onion and let cook until golden, 5 minutes more.
  5. Season with salt and pepper.
  6. Add chicken broth, potatoes and enough water to cover the potatoes.
  7. .Cook until potatoes are falling apart, about 1 hour.
  8. Stir in kale and let cook until leaves are tender and bright green, about 3 minutes
  9. Remove from heat then stir in the heavy cream
  10. Serve with grated parmesan cheese.
