Pease Pudding comes from Newcastle and is traditionally served with pork or sausages. Try it with Beef and Guinness Stew…
- Follow directions on the packet for soaking and cooking split peas
- Once cooked, drain the peas and puree them in a blender
- Mix in the butter and eggs then season with salt and pepper to taste
- Spoon the mixture into a well-greased 3-cup pudding bowl
- Cover tightly with foil and tie around the rim to ensure a good seal
- Place the bowl on a steaming rack in a saucepan containing about 2-inches of water
- Cover the saucepan and steam for 1 hour
- Remove the pudding from the pan, cut the string and remove the foil
- Serve the pudding directly from the bowl in which it was cooked, or you can let the pudding cool, cut into slices then fry in a little butter.
