Pease Pudding

Pease Pudding comes from Newcastle and is traditionally served with pork or sausages. Try it with Beef and Guinness Stew

  1. Follow directions on the packet for soaking and cooking split peas
  2. Once cooked, drain the peas and puree them in a blender
  3. Mix in the butter and eggs then season with salt and pepper to taste
  4. Spoon the mixture into a well-greased 3-cup pudding bowl
  5. Cover tightly with foil and tie around the rim to ensure a good seal
  6. Place the bowl on a steaming rack in a saucepan containing about 2-inches of water
  7. Cover the saucepan and steam for 1 hour
  8. Remove the pudding from the pan, cut the string and remove the foil
  9. Serve the pudding directly from the bowl in which it was cooked, or you can let the pudding cool, cut into slices then fry in a little butter.
